Caddo Lake Green Tomato Pickles

3 cups sugar
1/4 cup pickling salt
1 quart white vinegar
1 gallon green tomatoes chopped
1 quart onion chopped
1/2 quart hot pepper chopped (can use some bell peppers)

Bring sugar, pickling salt, and vinegar to a boil. Add all the vegetables and bring to a boil. Boil for 2 minutes.

Then can them. Should make about 8 pints.

Zucchini Casserole

I got this recipe from my mom, and it was a hit at Aaron's office lunch.

3 medium zucchini grated (about 3 cups)
1 1/4 cups cubed herb stuffing (I used Pepperidge Farm)
1/2 cup sauteed fresh sliced mushrooms (I sauteed in my bacon grease)
1/4 cup chopped onion
2 slices bacon, cooked and crumbled
1/2 cup grated Swiss cheese
1/4 cup melted butter
1 beaten egg
1/2 tsp. salt
1/4 tsp. pepper
dash of garlic powder

Combine all ingredients. Put in a greased 2 quart casserole dish. Cook for 40 minutes in a 350 degree oven.
