Potatoes Elite Casserole

This is one of our new favorites.

6 medium potatoes, cooked and grated
1 1/2 tsp. salt
1 cup sour cream or French onion dip
6 to 8 green onions, chopped
1 cup shredded cheddar cheese
1/2 cup melted butter

Combine all ingreidents except butter, spoon into 2 quart casserole. Pour butter over top and bake at 400 degrees for 25 minutes or until lightly browned. Serves 6 to 8.

This one is fabulous! We tried it the other night, and I can't decide if it's better the first day or the second as leftovers. Great recipe. Thanks for sharing, Cheryl!

Glad you enjoyed it. It is one of my favorite recipes, and easy to make a lot of when feeding a bunch of people. I used it when I did the first Valentine's dinner with the 5th and 6th graders.
